Got Breakfast Blahs?-Make French Toast!
Recognize this scenario? It’s early Sunday morning, your family and guests are still snug abed and there you sit, staring at your coffee and wondering what to feed this mob.
Why not give them a breakfast or brunch they will remember? Make stuffed French Toast a couple of different ways served with sliced fruit and yogurt and you definitely will get their attention.
Today I’d like to share a few of my favorite French toast recipes with you. First is the more traditional Stuffed French Toast served with fruit and a cheesy filling. After that we get a little more daring with easy to make Bacon Egg & Cheese French Toast.
I think your family and guests will really like it Put these on the table with assorted syrups and jams, orange slices and some yogurt and it’s breakfast time!
Traditional Stuffed French Toast
- 1 (8 oz.) pkg. cream cheese, softened
- 1 tsp. vanilla
- 1/2 c. pecans
- 1 loaf white bread
- 4 eggs
- 1/2 c. whipping cream
- 1/2 tsp. vanilla
- 1/2 tsp. nutmeg
- 1 (12 oz.) strawberry compote or jam
- 1/2 c. orange juice
- 1tsp orange zest
– Beat the cream cheese and vanilla together until fluffy. Stir in the nuts.
– Spread about 1 1/2 tablespoon of the mixture on a slice of bread. Top with a second piece of bread (like a sandwich). Repeat this process 10-12 times until the mixture is all used.
– Beat together the eggs, whipping cream, vanilla and nutmeg. Dip the “sandwiches” into the egg mixture. Cook on a lightly greased griddle until golden brown, turn to cook the other side. Keep the cooked “sandwiches” warm by placing them on a baking sheet in a warm oven.
Meanwhile, heat together the preserves and orange juice. To serve, dust the Stuffed French Toast with powdered sugar and drizzle the warm sauce over the top. Sprinkle on orange zest to garnish.
Makes 10-12 pieces.
Bacon Egg & Cheese French Toast
Here is a recipe idea I came up with a while back and boy it’s good! A complete breakfast in one package, it is really simple to prepare and looks pretty too.
- 6 fresh eggs
- 1/4 cup milk
- 1 T ground cinnamon
- 2 T Maple syrup
- 1 tsp Vanilla flavoring
- Texas Toast bread
- 6 more eggs
- 18 sliced cooked bacon
- 6 slices cheddar cheese
For this easily prepared dish first beat 6 eggs and scramble. Cook the bacon crisp and drain on paper towels. To make the egg dip for the toast mix the other 6 eggs with milk,syrup and spices.
Preheat your griddle or cast iron skillet to medium high. Layer one slice of cheddar cheese, three strips of bacon, and a serving of scrambled egg (about 2 Tsp) onto a piece of Texas toast and cover with another piece of Texas toast.
Press the sandwich together and dip in the egg mixture. Put it on the hot griddle carefully and cook until edges start to brown. Turn with spatula and cook on other side until brown (about 1 minute).
Make all the French toast and arrange the portions shingled on a platter with orange slices and fresh strawberries. Before serving lightly dust with powdered sugar. . I hope you like these delicious Stuffed French Toast dishes as much as we do here at home God Bless you all.
