As I descended to the garden, I could see the thunderheads coming over the mountains to the south, heavy rain below them making the mountains misty. I picked quickly, filling my bags with tomatoes and peppers. The wind was picking up, whipping the tops of the trees to and fro. I was not quick enough. It happened quite suddenly, as is typical of thunderstorms around here this time of year. I barely felt the first drop before I’d felt the first fifty. I tucked the knife into my pocket and ran. By the time I reached the car twenty feet away, I was drenched.
I got home, wringing out my hair and my clothes and smiled soggily at my husband. “Is lunch ready?”
He pulled me into the kitchen and I sighed in relief. A ceramic bowl of French onion soup was waiting for me on the table, browned Swiss cheese bubbling over the edges and rye bread pushing up under it, toasted on top and mushy with soup on the bottom, the perfect greeting after being out in the rain.
A can of soup from the store won’t ever beat homemade soup, of course, but we don’t always have time to let soup simmer on the stove for hours. So when the discount grocery store down the street started carrying high quality organic soups for ninety-nine cents a can, we picked up several to line our pantry, ready to serve us on days like today, when warmth, comfort, and nourishment needed to come quickly.
My husband and I, however, can’t just leave a can of soup to its own devices. We have to do something to dress it up a bit. And French onion soup is a perfect candidate for special ingredients.
Enhanced French Onion Soup
What You Need:
- a toaster oven
- one ceramic bowl, oven safe
- one can quality French onion soup
- one slice of hearty bread or a large handful of croutons
- enough slices of swiss cheese to cover the bowl
1. Preheat the toaster oven to 350 degrees Fahrenheit (175 degrees Celcius).
2. Fill the bowl with the soup, and lay the slice of bread over the top. If using croutons, just sprinkle them over the top until the soup is mostly covered.
3. Lay the slices of Swiss cheese over the bread.
4. Bake in the toaster oven until the cheese is melted and browned on top and the soup is bubbling over the edges. Let cool, slightly, then enjoy!
